What is cocoa powder?

Cocoa powder comes from the cocoa bean, but it is not made from whole, ground cocoa beans, as consumers who are unfamiliar with the product often believe.

First, there is the cocoa bean, which is fermented and dried in the producing country. It is then roasted (note that improperly roasted cocoa will have a burnt taste and lose the pleasant aromas resulting from proper fermentation), and finally ground to produce cocoa paste or cocoa liquor—both terms are used interchangeably.

This cocoa paste is then pressed. Some of the cocoa butter is extracted during this process. What remains is the cocoa cake, which contains 12 to 14 percent cocoa butter. This allows it to be ground into pure cocoa powder. The resulting powder must be unsweetened and light in color.

We use cocoa butter to make a multi-purpose cream: CacaoChanvre Cream. You can use it in the kitchen or apply it to your skin.

It is high in dietary fiber and antioxidants.

You can make many recipes with cocoa powder, such as a chocolate mousse or ahot chocolate made with water. You can use it to make tiramisu, chocolate marble cake, or simply mix it into your yogurt.

Store it in an airtight container at room temperature, away from moisture and light.
