🥧 Broyé du Poitou – The Traditional Artisanal Recipe from Poitou
The Broyé du Poitou is one of our region’s most iconic specialties: a large, traditional shortbread cookie—golden, generous, and melt-in-your-mouth—made according to a traditional Poitou recipe passed down from generation to generation. This rustic, simple, and utterly indulgent shortbread cookie embodies the spirit of Poitou: authenticity, sharing, and artisanal craftsmanship.
At our workshop inAvailles-en-Châtellerault (Vienne), we carry on this traditional family recipe, staying true to the methods of yesteryear. Each artisanal cookie is handmade and carefully shaped, without additives or artificial ingredients, to preserve the pure flavor of the ingredients and the essence of this Poitou specialty. A genuine artisanal “broyé” from Poitou, made in our artisanal workshop in Poitou.
🌾 A Traditional Recipe from Poitou: Simple & Authentic
Originating in the countryside of Poitou, the Broyé du Poitou was traditionally prepared for special occasions, village festivals, and family meals. Its traditional recipe consists of just a few essential ingredients: flour, sugar, butter, eggs, and a pinch of salt. Nothing more.
Its simplicity is what makes it so special: a traditional Poitou cookie—generous in size and with a bold flavor—that evokes the desserts of yesteryear and the treats our grandmothers used to make. The fact that it’s shaped by hand and baked slowly gives it an incomparable crumbly texture, typical of Poitou shortbread.
🧑🍳 Preserving Artisanal Craftsmanship
In our workshop, each artisanal Broyé du Poitou is made using traditional methods. The dough is gently kneaded, then flattened into a large disc before being decorated with a fork, as is customary.
The most symbolic gesture remains “breaking” the broyé: it is never cut with a knife. It is broken by hand, in the center of the table, to be shared—a true dish meant for sharing, true to the convivial spirit of Poitou. A simple and authentic treat to share.
🍪 A Cookie to Share—Perfect for Any Occasion
